FIRST OF ALL, everyone must understand that I can't tolerate very spicy foods - I like the taste and the tingle but an old ulcer makes such things inedible without an entire jar of TUMS 1000's! But Kathy had a recipe for a mild chili that we made yesterday..... it was originally designed for ground turkey but I had hamburger and used that instead. Chopped green pepper and chopped onion, a bunch of spices and chili sauce and just a touch of hot sauce - all simmered for about 45 minutes (oh yeah.... red and dark red kidney beans too)! IT WAS DELICIOUS!!!!!
I made cornbread (with a substitution of creamed corn for the milk) and used bacon fat in a cast iron skillet like I had seen done on several cooking shows. Even THAT was AWESOME! Crispy on the bottom and crumbly on the inside........ what a wonderful Fall meal!!!!!
Thank goodness we have leftovers of both!!!!!
