Wednesday Morning

OK, I know this is a little unconventional but I have this problem. Remember the other day I bought one of those rotisserie chickens you always see in the market? That's the one that make that great stock - yep.... that's the one. Well I saved all of the chicken meat in the fridge. THEN yesterday I was in the market picking up a fresh loaf of ciabatta bread and found whole chickens on a 'Managers Special' for $.49/lb !!!!!!! Well, I just couldn't resist....... THEN, I had to find a different way of cooking it so I made a beer can chicken (if you haven't heard of it or MADE it, make a comment and I'll explain - but it's GREAT!).

SO...... I cooked THAT chicken last night....... NOW I HAVE A BUNCH OF CHICKEN IN THE FRIDGE AND HAVE TO FIND SOME WAY TO USE IT UP!!!

So here's the unconventional part - I know chicken cacciatore is traditionally made starting with uncooked chicken, but I'm gonna make some with my leftover cooked chicken and some of my homemade stock. The only things I need are a red pepper and some mushrooms.

I'll blog about the results later but I think it's gonna be great!

  1. Randy makes beer chicken all the time only we subtitue Mountain Dew for beer. Nice and moist and it makes a great chicken caccitore.
